Prepare the Slaw
In a large bowl, combine the shredded cabbage, shredded carrots, apple cider vinegar, and sugar. Toss well to combine, and let it sit for at least 15 minutes to allow the flavors to meld.

Prepare the Eggroll Filling
In a mixing bowl, combine the pimento cheese and pulled pork. Mix until well combined.

Assemble the Eggrolls
Take an eggroll wrapper and place about 2 tablespoons of the pimento cheese and pulled pork mixture in the center. Fold the bottom corner over the filling, then fold in the sides and roll tightly. Seal the edges with a little water.

Fry the Eggrolls
In a deep frying pan, heat vegetable oil over medium-high heat. Once hot, carefully add the eggrolls in batches, frying until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.

Serve
Serve the crispy eggrolls warm, drizzled with BBQ sauce and accompanied by the vinegar slaw.
