Roast the Brussel Sprouts
Preheat your oven to 400°F (200°C). Trim and halve the Brussel sprouts, then toss them with olive oil, salt, and pepper. Spread them on a baking sheet and roast for 20-25 minutes until golden brown and crispy.

Prepare the Romaine and Other Ingredients
While the Brussel sprouts are roasting, chop the romaine lettuce into bite-sized pieces. Dice the red onion, slice the kalamata olives, crumble the feta cheese, and chop the salami into bite-sized pieces.

Combine the Salad Ingredients
In a large bowl, combine the chopped romaine, roasted Brussel sprouts, drained and rinsed cici beans, diced red onion, sliced olives, crumbled feta cheese, and chopped salami.

Make the Vinaigrette
In a small bowl, whisk together 1/4 cup of white balsamic vinegar, 1/2 cup of olive oil, salt, and pepper to taste.

Dress the Salad
Pour the vinaigrette over the salad mixture and toss everything together until well combined.

Serve with Crostini
Serve the chopped salad immediately with house-made crostini on the side.
