Prepare the Chicken
Cut the boneless chicken breast into small bite-sized pieces.

Make the Batter
In a bowl, mix the flour, cornmeal, garlic powder, onion powder, paprika, salt, and black pepper together. In another bowl, whisk together the buttermilk and egg.

Combine Mixtures
Dip the chicken pieces into the buttermilk mixture, then coat them in the flour mixture, pressing down to ensure an even coating.

Heat the Oil
In a large skillet, heat the vegetable oil over medium-high heat until it shimmers.

Fry the Fritters
Carefully place the coated chicken pieces in the hot oil. Fry in batches for about 4-5 minutes on each side or until golden brown and cooked through.

Drain and Serve
Remove the fritters from the oil and drain on paper towels. Serve warm with buttermilk ranch dressing.
