Make the Pretzel Dough
In a large bowl, dissolve the yeast and sugar in warm water. Let it sit for about 5 minutes until frothy. Mix in the flour and salt until a dough forms. Knead the dough for about 5-7 minutes until smooth. Cover and let it rise in a warm place for about 1 hour, or until doubled in size.

Shape the Pretzel Sticks
Preheat your oven to 425°F (220°C). Punch down the risen dough and divide it into 8 equal pieces. Roll each piece into a long rope about 12 inches long, then twist into a pretzel shape or leave as sticks.

Prepare the Baking Soda Bath
In a large pot, bring 10 cups of water and the baking soda to a boil. Carefully add the pretzel sticks to the boiling water, cooking in batches for about 30 seconds each. Remove with a slotted spoon and place on a parchment-lined baking sheet.

Bake the Pretzels
Sprinkle the pretzels with coarse sea salt and bake in the preheated oven for 12-15 minutes, or until golden brown.

Make the Nacho Cheese Sauce
In a saucepan, melt 2 tablespoons of butter over medium heat. Stir in 2 tablespoons of flour and cook for 1 minute. Gradually add 1 cup of milk, whisking constantly until thickened. Stir in 1 cup of shredded cheddar cheese, salt, and pepper to taste until smooth. Serve warm with pretzel sticks.
