Prepare the Wings
Rinse and pat dry the chicken wings. Season them with salt and black pepper to taste.

Prepare the Smoker
Preheat your smoker to 225°F (107°C) and add the applewood chips for smoking.

Smoke the Wings
Place the seasoned wings in the smoker and smoke for about 1.5 to 2 hours, or until they reach an internal temperature of 165°F (74°C).

Make the BBQ Sauce
In a saucepan over medium heat, combine honey, chipotle peppers, ketchup, apple cider vinegar, garlic powder, onion powder, smoked paprika, salt, and black pepper. Stir until well mixed and simmer for about 10 minutes.
