Prepare the Chicken

Cut the boneless, skinless chicken breasts into bite-sized pieces. Season with salt and black pepper.

Place the cornstarch in a bowl and coat each piece of chicken evenly with cornstarch. Shake off any excess.
Fry the Chicken

In a large skillet or wok, heat the vegetable oil over medium-high heat until hot.

Add the coated chicken pieces to the hot oil in batches, ensuring not to overcrowd the pan. Fry until golden brown and cooked through, about 5-7 minutes. Remove and drain on paper towels.
Make the Sweet and Sour Sauce

In a saucepan over medium heat, combine brown sugar, apple cider vinegar, ketchup, soy sauce, and minced garlic. Stir until the sugar dissolves.

Add the pineapple chunks, diced red bell pepper, and diced onion to the sauce. Cook for an additional 5-7 minutes, until the vegetables are tender.
