Method
Prepare the Sticky Rice
- 1
Soak the Rice
Rinse the glutinous rice under cold water until the water runs clear. Soak the rice in water for at least 4 hours, preferably overnight.
- 2
Steam the Rice
Drain the soaked rice and place it in a steamer lined with cheesecloth. Steam over boiling water for about 30-35 minutes, or until the rice is tender and translucent.
Make the Coconut Sauce
- 3
Combine Ingredients
In a saucepan, combine the coconut milk, sugar, and salt. Heat over medium heat until the sugar is dissolved, but do not bring it to a boil.
- 4
Mix with Sticky Rice
Once the rice is cooked, transfer it to a large bowl and pour about 3/4 of the coconut sauce over it. Stir gently to combine and let it sit for 15-20 minutes to absorb the flavors.
Prepare the Mango Topping
- 5
Slice the Mangoes
Peel the ripe mangoes and cut them into thin slices or wedges.
Serve the Dish
- 6
Plate the Sticky Rice
On a serving plate, place a generous portion of the sticky rice. Drizzle the remaining coconut sauce over the top.
- 7
Add Mango and Garnish
Arrange the mango slices on top of the sticky rice. Garnish with sesame seeds and fresh mint leaves.
