Method
Making the Pudding
- 1
Prepare the Ingredients
Gather all the ingredients. Make sure the mango is ripe for a sweet and creamy pudding.
- 2
Combine the Ingredients
In a medium saucepan, whisk together the mango puree, coconut milk, sugar, cornstarch, vanilla extract, and a pinch of salt until well blended.
- 3
Cook the Mixture
Place the saucepan over medium heat and continue whisking the mixture until it starts to thicken and bubble. This should take about 5-7 minutes.
- 4
Cool the Pudding
Once thickened, remove the saucepan from heat. Pour the pudding into serving cups or bowls and let it cool to room temperature, then refrigerate for at least 2 hours until set.
Preparing the Toppings
- 5
Slice the Mango
While the pudding is cooling, slice the fresh mango into thin pieces for garnishing.
- 6
Prepare the Coconut
If using fresh coconut, shred it or use store-bought shredded coconut for easy topping.
- 7
Garnish the Pudding
Once the pudding is set, top each serving with mango slices, a sprinkle of shredded coconut, and a mint leaf for garnish.
