Bulgogi Preparation

Marinate the Beef

In a mixing bowl, combine the thinly sliced beef, soy sauce, brown sugar, sesame oil, minced garlic, minced ginger, chopped green onions, and black pepper. Mix well to ensure the beef is evenly coated. Cover and let it marinate in the refrigerator for at least 30 minutes.

Cook the Bulgogi

In a large skillet over medium-high heat, add the marinated beef and cook for about 5-7 minutes, stirring frequently until the beef is cooked through and browned. Remove from heat and set aside.

Prepare Vegetables

While the beef is marinating, julienne the carrot and cucumber. Blanch the spinach in boiling water for 1-2 minutes, then drain and rinse under cold water to stop the cooking. Squeeze out excess water and set aside.

Rice Cooking

Cook the Rice

In a medium pot, rinse the short-grain rice under cold water until the water runs clear. Add the 2.5 cups of water and bring it to a boil. Reduce heat to low, cover, and simmer for about 20 minutes until the rice is tender and water is absorbed. Remove from heat and let it sit for an additional 10 minutes, covered.

Season the Rice

Once the rice is cooked, fluff it with a fork and stir in toasted sesame seeds. Let it cool slightly before using.

Assembly

Roll the Kim-Bap

Lay a sheet of nori on a bamboo sushi mat, shiny side down. With wet hands, spread a thin layer of seasoned rice over the nori, leaving about 1 inch at the top edge. Arrange a portion of bulgogi, julienned carrots, cucumbers, spinach, and pickled radish in a line across the center of the rice.

Roll it Up

Starting from the bottom, roll the sushi mat away from you, applying gentle pressure to keep the roll tight. Roll until you reach the edge of the nori. Use a bit of water to seal the edge. Repeat with the remaining ingredients.

Slice and Serve

Using a sharp knife, slice the rolled kim-bap into bite-sized pieces. Serve with soy sauce or pickled vegetables on the side.
