In a large bowl, combine the buttermilk, salt, black pepper, paprika, garlic powder, and onion powder. Add the chicken pieces and ensure they are well coated. Cover and refrigerate for at least 2 hours, preferably overnight.

In a separate bowl, mix together the flour and cornstarch. This will be used to coat the chicken.

In a deep pan or fryer, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).
