Preparation
Make the crust
Preheat your oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined and the mixture resembles wet sand.
Form the crust
Press the crumb mixture into the bottom of a 9-inch springform pan evenly. Bake in the preheated oven for 8-10 minutes until set and lightly golden. Remove from oven and let cool.
Prepare the filling
In a large mixing bowl, beat the softened cream cheese until smooth and creamy. Gradually add granulated sugar and matcha powder, mixing until fully incorporated.
Combine ingredients
Add vanilla extract and sour cream to the cream cheese mixture, and mix until smooth. Add eggs one at a time, mixing on low speed until just combined. Do not overmix.
Bake the cheesecake
Pour the filling over the cooled crust in the springform pan. Bake in the oven at 325°F (160°C) for 40-45 minutes, or until the center is set but slightly jiggly.
Cool and chill
Turn off the oven and leave the cheesecake inside with the door ajar for 1 hour. Then, remove from the oven and let it cool to room temperature before refrigerating for at least 4 hours or overnight.
Serve
Once chilled, remove the cheesecake from the springform pan. Slice and serve chilled, optionally garnished with whipped cream or fresh berries.
