    Prepare the Vinaigrette

    In a skillet, cook the bacon over medium heat until crispy. Remove and chop into small pieces. In the same skillet, add cherry tomatoes, cooking until they burst, about 3-4 minutes. Stir in olive oil, red wine vinegar, honey, salt, and pepper. Mix in the chopped bacon and set aside.

    Sauté the Swiss Chard

    In a large pan, heat a tablespoon of olive oil over medium heat. Add the rainbow Swiss chard and sauté for about 5 minutes until wilted. Season with salt and pepper to taste.

    Sear the Scallops

    Pat the sea scallops dry with a paper towel and season with salt and pepper. In the same pan used for the Swiss chard, heat another tablespoon of olive oil over high heat. Add the scallops and sear for about 2-3 minutes on each side until golden brown and cooked through.

    Serve

    On a plate, arrange a bed of sautéed Swiss chard, top with seared scallops, and drizzle with the tomato bacon vinaigrette.
