    Prepare the Ingredients

    Chop the bacon into small pieces, slice the leek thinly, and dice the potatoes into small cubes.

    Cook the Bacon

    In a large pot, cook the bacon over medium heat until crispy. Remove bacon and set aside, leaving the rendered fat in the pot.

    Sauté the Vegetables

    In the same pot, add the butter and the sliced leeks. Sauté for about 3-4 minutes until the leeks are soft. Add the diced potatoes and cook for another 5 minutes.

    Add Broth and Seasonings

    Pour in the chicken or seafood broth, add thyme, salt, and black pepper. Bring to a simmer and cook until potatoes are tender, about 15 minutes.

    Finish the Stew

    Stir in the heavy cream and the cooked bacon. Add the fresh oysters and cook for an additional 5 minutes until oysters are just cooked through.

    Serve

    Taste and adjust seasoning if necessary. Serve hot, garnished with parsley if desired.
