Prepare the Oysters
Rinse the shucked oysters under cold water and pat them dry with paper towels.

Make the Breading
In a shallow bowl, combine the flour, cornmeal, salt, and black pepper. In another bowl, place the beaten eggs.

Heat the Oil
In a large skillet, heat the vegetable oil over medium-high heat until hot (about 350°F or 175°C).

Fry the Oysters
Carefully add the breaded oysters to the hot oil, frying in batches to avoid overcrowding. Fry for about 2-3 minutes on each side, or until golden brown and crispy.

Drain and Serve
Remove the fried oysters from the oil and drain on paper towels. Serve hot with hot sauce, smoked blue cheese, pickled celery, and radishes on the side.
