Preparing the Halibut

Make the Batter
In a large mixing bowl, combine the all-purpose flour, baking powder, salt, and black pepper. Gradually whisk in the beer (or sparkling water) until the batter is smooth and free of lumps. Let it rest for about 15 minutes.

Prepare the Fish
Pat the halibut fillets dry with paper towels. Season both sides with a little salt and pepper.

Fry the Halibut
Dip each halibut fillet into the batter, allowing the excess to drip off. Carefully place the battered fish into the hot oil. Fry for about 4-5 minutes on each side, or until golden brown and crispy. Remove and place on paper towels to drain excess oil.
