Batter Preparation
1. Mix Dry Ingredients
In a large bowl, whisk together the all-purpose flour, cornstarch, baking powder, and 1 tsp of salt until well combined.
2. Add Wet Ingredients
Create a well in the center of the dry mixture and add the egg and cold sparkling water. Stir until the batter is smooth and free of lumps. Let it rest for 15 minutes.
Fish Preparation
3. Season the Fish
Pat the Alaskan halibut fillets dry with paper towels. Season both sides with 1 tsp of salt and 1 tsp of black pepper.
5. Batter the Fish
Dip each seasoned halibut fillet into the batter, allowing the excess to drip off before carefully placing it into the hot oil.
6. Fry the Fish
Fry the fillets for about 4-5 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.
Chips Preparation
7. Prepare Potatoes
Peel the russet potatoes and cut them into thick fries about 1/2 inch wide.
8. Soak Potatoes
Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch, then drain and pat dry.
9. Fry the Chips
In the same oil used for the fish, fry the potatoes in batches at 350°F (175°C) for 5-6 minutes until golden and crispy. Remove and drain on paper towels. Season with 1 tsp of salt.
Serving
10. Plate and Serve
Serve the crispy halibut fillets alongside the golden chips. Enjoy with tartar sauce or malt vinegar if desired.
