Preparation of Fish
Prepare the Cod
Rinse the cod fillets under cold water and pat them dry with paper towels. Season both sides with salt, black pepper, and lemon juice. Set aside to marinate for 15 minutes.

Make the Batter
In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the beer or sparkling water until the batter is smooth and has a thick consistency.

Fry the Chips
In a large pot, heat vegetable oil over medium-high heat. Once hot, carefully add the soaked potato wedges in batches, frying them for about 5-7 minutes until golden brown. Remove and drain on paper towels. Season with salt.
Fry the Fish
Dip each marinated cod fillet into the batter, allowing the excess to drip off. Carefully place the battered fillets in the hot oil and fry for 4-5 minutes on each side until golden brown and crispy. Remove and drain on paper towels.
Serving
Serve the Dish
Plate the crispy fish alongside the golden chips. Serve with malt vinegar, tartar sauce, and lemon wedges on the side for drizzling.
