Preparation
Prepare the Haddock
Rinse the haddock fillets under cold water and pat them dry with paper towels. Set aside.
Make the Batter
In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the cold water until the batter is smooth and slightly thick. Let it sit for 15 minutes.
Frying
Coat the Haddock
Dip each haddock fillet into the batter, ensuring it is fully coated.
Fry the Haddock
Carefully place the battered haddock fillets into the hot oil. Fry for 4-5 minutes on each side, or until they are golden brown and cooked through. Remove the fillets from the oil and drain them on paper towels.
Serving
Plate the Dish
Serve the fried haddock fillets hot, garnished with lemon wedges and accompanied by tartar sauce.
