Method

Preparation

  1. 1

    Clean the Mussels

Rinse the fresh mussels under cold water, scrubbing the shells with a brush to remove any dirt or sand. Remove any beards (the fibrous strands) that may be attached to the shells. Discard any mussels that are open and do not close when tapped.

  2. 2

    Chop Aromatics

Mince the garlic cloves and finely chop the shallots and parsley. Set aside.

  3. 3

    Prepare Lemon

Cut the lemon in half and juice one half; reserve the other half for garnish.

Cooking

  1. 4

    Sauté Aromatics

In a large pot, heat the olive oil over medium heat. Add the minced garlic and chopped shallots, sautéing until fragrant and translucent, about 3-4 minutes.

  2. 5

    Add Mussels and Wine

Add the cleaned mussels to the pot along with the white wine, salt, and black pepper. Stir to combine.

  3. 6

    Steam the Mussels

Cover the pot with a lid and increase the heat to high. Allow the mussels to steam for about 5-7 minutes or until they have opened. Discard any mussels that remain closed.

  4. 7

    Finish with Parsley and Lemon

Remove the pot from heat, and stir in the chopped parsley and lemon juice. Serve immediately.

Serving

  1. 8

    Prepare for Serving

If using, slice the crusty bread and toast lightly. Arrange the mussels in a bowl and garnish with lemon wedges and additional parsley if desired. Serve with the toasted bread on the side for dipping.
