Method

Preparing the Fish

    Season the Cod

    Pat the king cod fillets dry with paper towels. Season both sides with salt and black pepper, then drizzle with lemon juice. Let the fish marinate for about 15 minutes.

Making the Batter

    Combine Dry Ingredients

    In a mixing bowl, whisk together all-purpose flour, cornstarch, baking powder, and salt until well combined.

    Add Liquid

    Gradually add cold sparkling water (and beer if using) to the dry ingredients. Mix until you achieve a smooth batter. It should be slightly thick but pourable.

Preparing the Chips

    Cut the Potatoes

    Peel the potatoes and cut them into thick fries (about 1/2 inch wide).

    Soak the Chips

    Place the cut fries in a bowl of cold water for at least 30 minutes to remove excess starch.

    Drain and Dry

    After soaking, drain the fries and pat them dry with paper towels.

Frying

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

    Fry the Chips

    Carefully add the dried potato fries to the hot oil in batches. Fry for about 5-7 minutes until golden brown and crispy. Remove with a slotted spoon and drain on paper towels. Season with salt.

    Fry the Fish

    Dip each seasoned king cod fillet into the batter, allowing excess to drip off, then carefully lower it into the hot oil. Fry for about 4-5 minutes or until golden brown and cooked through. Remove and drain on paper towels.

Serving

    Serve the crispy fish and chips hot, accompanied by tartar sauce and lemon wedges on the side.
