    Prepare Halibut

    Start by patting the halibut fillets dry with paper towels. This helps the batter adhere better.

    Season both sides of the halibut fillets with salt and black pepper. Set aside while you prepare the batter.

Batter Making

    Mix Dry Ingredients

    In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, and salt. Whisk to combine thoroughly.

    Gradually add the cold water and beer (if using) to the dry ingredients, whisking until the batter is smooth and free of lumps. The batter should be thick enough to coat the back of a spoon.

Frying Halibut

    Heat Oil

    In a deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small amount of batter in; it should sizzle immediately.

    Batter Halibut

    Dredge each halibut fillet in the batter, allowing any excess to drip off. Carefully place the battered fillet into the hot oil.

    Fry Halibut

    Fry the halibut for about 4-5 minutes on each side or until golden brown and crispy. Use a slotted spoon to remove the fish from the oil and place them on a plate lined with paper towels to absorb excess oil.
