Halibut Fish Crispy

Prepare the Halibut
Cut the halibut fillets into strips about 1-2 inches wide. Pat them dry with paper towels and season with salt and black pepper. Set aside.

Make the Batter
In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the cold sparkling water until the batter is smooth and slightly thickened. Let it rest for about 10 minutes.

Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Halibut
Dip each halibut strip into the batter, allowing any excess to drip off. Carefully place the battered fish in the hot oil, frying in batches to avoid overcrowding. Fry for about 4-5 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Prepare the Potatoes
Peel and cut the russet potatoes into thin strips (about 1/4 inch thick). Rinse them under cold water to remove excess starch, then pat dry with paper towels.

In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Potatoes
Carefully add the potato strips to the hot oil in batches. Fry for about 5-7 minutes, or until they turn golden brown and crispy. Remove with a slotted spoon and drain on paper towels. Immediately sprinkle with salt while hot.
