Preparing the Halibut

    In a mixing bowl, whisk together the flour, cornstarch, baking powder, salt, and pepper until well combined.

    Add Sparkling Water

    Gradually pour in the cold sparkling water while whisking until the batter is smooth and free of lumps. Let it sit for about 15 minutes.

    Heat the Oil

    In a deep frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Coat the Halibut

    Dip each halibut fillet into the batter, ensuring it is fully coated.

    Fry the Halibut

    Carefully place the coated fillets into the hot oil, frying them in batches if necessary. Cook for about 4-5 minutes on each side until golden brown and cooked through. Remove and drain on paper towels.

    Peel the russet potatoes and cut them into thick strips, about 1/4 inch wide.
