Method

Preparation of Halibut

    Cut the Halibut

    Cut the halibut fillet into bite-sized pieces, approximately 1-2 inches in size. Pat them dry with paper towels to remove excess moisture.

Making the Batter

    Mix Dry Ingredients

    In a large bowl, combine the all-purpose flour, cornstarch, baking powder, salt, black pepper, and garlic powder. Mix thoroughly.

    Add Water

    Gradually add the cold water to the dry ingredients while whisking until the batter is smooth and has no lumps. Adjust the consistency with more water or flour as needed.

Frying

    Heat Oil

    In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Batter the Halibut

    Dip each piece of halibut into the batter, ensuring it's well-coated on all sides.

    Fry the Halibut Bites

    Carefully place the battered halibut pieces into the hot oil in batches. Fry for about 4-5 minutes or until golden brown and cooked through, turning occasionally for even cooking.

    Drain and Cool

    Remove the fried halibut bites with a slotted spoon and place them on a plate lined with paper towels to drain excess oil.
