For the Halibut

Prepare the Batter
In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the cold sparkling water until the batter is smooth and thick.

Heat the Oil
In a large, deep skillet or fryer, heat the vegetable oil to 350°F (175°C).

Batter the Halibut
Dip each halibut fillet into the batter, allowing excess to drip off.

Fry the Halibut
Carefully place the battered halibut into the hot oil. Fry for about 4-5 minutes per side or until golden brown and cooked through. Remove and drain on paper towels.

Prepare the Potatoes
Peel the russet potatoes and cut them into thin strips to resemble fries.

Fry the Potatoes
In a separate pot or fryer, heat vegetable oil to 350°F (175°C). Carefully add the potato strips in batches and fry for about 5-7 minutes or until they are golden brown and crispy. Remove and drain on paper towels, then sprinkle with salt to taste.

In a small bowl, combine mayonnaise, chopped dill pickles, capers, lemon juice, and Dijon mustard. Stir until well combined. Adjust salt to taste.
