Preparing the Chips

Cut the Potatoes
Peel the russet potatoes and cut them into thick strips (about 1/2 inch wide).

Dry the Potatoes
Drain the potatoes and pat them dry with a clean kitchen towel.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Fry the Chips
Fry the potatoes in batches until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels. Season with salt.

Make the Batter
In a bowl, whisk together the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually add the cold sparkling water, mixing until smooth.

In a separate pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Dip and Fry the Halibut
Dip each halibut fillet into the batter, allowing excess to drip off. Carefully place the battered fish into the hot oil, frying in batches until golden brown and cooked through, about 5-6 minutes per side.

Remove the fried halibut and place it on paper towels to drain excess oil.
