Preheat the Oven
Preheat your oven to 425°F (220°C).

Prepare the Sweet Potatoes
Wash and peel the sweet potatoes. Cut them into thin fries, about 1/4 inch thick.

Season the Fries
In a large bowl, toss the sweet potato fries with olive oil, salt, paprika, garlic powder, and black pepper until evenly coated.

Bake the Fries
Spread the fries in a single layer on a baking sheet lined with parchment paper. Bake for about 25-30 minutes, flipping halfway through, until crispy and golden.

Make the Batter
In a medium bowl, whisk together the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually add the cold sparkling water, mixing until smooth.

Heat the Oil
In a large skillet or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Batter the Haddock
Dip each haddock fillet into the batter, allowing any excess to drip off.

Carefully place the battered haddock into the hot oil. Fry for about 4-5 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.
