Preparing the Haddock

Prepare the Batter
In a large mixing bowl, combine all-purpose flour, cornstarch, baking powder, salt, and black pepper.

Make the Batter
Gradually whisk in the cold sparkling water until the batter is smooth and slightly thick.

Heat the Oil
Heat vegetable oil in a deep skillet or frying pan over medium-high heat until it reaches 350°F (175°C).

Fry the Haddock
Dip each haddock fillet into the batter, allowing excess to drip off before gently placing it into the hot oil.

Finish Frying
Fry for about 4-5 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

Cook the Fries
Cook the frozen French fries according to package instructions until crispy.

In a saucepan, heat the gravy until it is hot but not boiling.

Once the fries are cooked, place them on a serving plate. Top with cheese curds and pour hot gravy over the top.
