Prepare the Haddock

    Pat the haddock fillets dry with paper towels. Season both sides with salt and black pepper.

Make the Batter

    In a mixing bowl, whisk together the all-purpose flour, cornstarch, baking powder, and salt until well combined.

    Slowly mix in the cold water and beer (if using) until the batter is smooth. Let the batter rest for about 15 minutes.

Prepare the Onion Rings

    Slice the Onions

    Peel the onions and slice them into 1/4-inch thick rings. Separate the rings and set them aside.

    In a bowl, mix together the all-purpose flour, baking powder, and salt. Dredge the onion rings in the flour mixture, shaking off any excess.

Fry the Haddock and Onion Rings
