Method

Preparing the Haddock

    Make the Batter

    In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the cold sparkling water until the batter is smooth and slightly thick.

    Heat the Oil

    In a large, deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches about 350°F (175°C).

    Coat the Haddock

    Dip each haddock fillet into the batter, making sure it is fully coated.

    Fry the Haddock

    Carefully place the battered haddock fillets into the hot oil. Fry for about 4-5 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

Making the Greek Salad

    Chop the cucumber, tomatoes, and red onion into bite-sized pieces. Place them in a large bowl.
