    In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the cold sparkling water until the batter is smooth and slightly thick.

    In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer for accuracy.

    Batter the Haddock

    Dip each haddock fillet into the batter, ensuring it is fully coated.

    Fry the Haddock

    Carefully place the battered haddock fillets into the hot oil. Fry for about 5-6 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.
