Prepare the Haddock
Rinse the haddock fillets under cold water and pat them dry with paper towels. Season both sides with salt, black pepper, and lemon juice. Let them marinate for about 15 minutes.

Make the Batter
In a mixing bowl, combine all-purpose flour, cornstarch, baking powder, and salt. In another bowl, whisk the egg and then add beer (or sparkling water). Gradually mix the wet ingredients into the dry ingredients until well combined. The batter should be smooth and slightly thick.
Cooking the Haddock

Fry the Haddock
Heat oil in a deep skillet or frying pan over medium-high heat. Dip each marinated haddock fillet into the batter, ensuring it's well coated. Carefully place the battered fillets into the hot oil and fry for about 4-5 minutes on each side, or until golden brown and crispy. Remove from the oil and drain on paper towels.

Sauté the Vegetables
While the haddock is frying, slice the zucchini, both bell peppers, and red onion into thin strips. Heat olive oil in another skillet over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant. Add the sliced vegetables, salt, and black pepper. Cook for about 5-7 minutes until the veggies are tender but still crisp. Stir in the chopped parsley before serving.

Arrange the crispy haddock on a serving plate alongside the sautéed California style veggies. Garnish with additional parsley if desired and serve immediately.
