Preparing the Batter

Mix Dry Ingredients
In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Whisk until well blended.

Add Sparkling Water
Gradually add the cold sparkling water to the dry ingredients while whisking continuously until the batter is smooth and slightly thick. Let it rest for about 15 minutes.
Preparing the Fish

Season the Haddock
Pat the haddock fillets dry with paper towels. Season both sides with salt and black pepper.

Heat Oil
In a deep skillet or fryer, heat the vegetable oil to 350°F (175°C).
Cooking the Fish

Batter the Fish
Dip each seasoned haddock fillet into the batter, ensuring they are fully coated.

Fry the Fish
Carefully lower the battered haddock fillets into the hot oil. Fry for about 5-7 minutes or until golden brown and crispy. Remove and drain on paper towels.
Preparing the French Fries

Cut the Potatoes
Peel and cut the russet potatoes into thick strips for fries. Rinse under cold water to remove excess starch.

Fry the Potatoes
In the same oil used for frying the fish, carefully add the cut potatoes. Fry for about 5-8 minutes or until they are golden and crispy. Remove and drain on paper towels, then season with salt.
Serving

Plate the Dish
Serve the hot, crispy haddock fish alongside the fresh-cut French fries. Optionally, garnish with lemon wedges and tartar sauce.
