Halibut Preparation

Shrimp & Garlic Butter

Onion Rings

Method

Halibut Preparation

  1. 1

    Marinate the Halibut

In a large bowl, combine olive oil, lemon juice, garlic powder, salt, and black pepper. Add the halibut fillets and coat them well. Cover and let marinate in the refrigerator for at least 30 minutes.

  2. 2

    Grill the Halibut

Preheat the grill to medium-high heat. Remove halibut from marinade and place on the grill. Cook for about 4-5 minutes on each side, or until the fish flakes easily with a fork. Remove from grill and keep warm.

Shrimp & Garlic Butter

  1. 3

    Prepare Garlic Butter

In a skillet over medium heat, melt the butter. Add minced garlic and red pepper flakes, cooking until the garlic is fragrant, about 1-2 minutes.

  2. 4

    Cook the Shrimp

Add the shrimp to the skillet and cook for about 2-3 minutes on each side, or until they turn pink and opaque. Stir in chopped parsley just before serving.

Onion Rings

  1. 5

    Prepare the Breading

In one bowl, place the flour and salt. In a second bowl, whisk together the beaten egg and milk. In a third bowl, combine cornmeal and a pinch of salt.

  2. 6

    Bread the Onion Rings

Dip each onion ring first into the flour, then into the egg mixture, and finally into the cornmeal, ensuring they are well coated.

  3. 7

    Fry the Onion Rings

Heat oil in a deep pan over medium-high heat. Once hot, carefully add the breaded onion rings in batches and fry until golden brown, about 2-3 minutes per side. Remove and drain on paper towels.
