Marinara Sauce

Prepare the Marinara Sauce

Sauté Garlic
Add 3 minced garlic cloves and sauté for about 1 minute until fragrant, being careful not to burn.

Add Tomatoes and Seasonings
Stir in the crushed tomatoes, 1 teaspoon of dried oregano, 1 teaspoon of dried basil, 1 teaspoon of salt, 0.5 teaspoon of black pepper, 0.5 teaspoon of red pepper flakes, and 1 teaspoon of sugar.

Simmer the Sauce
Bring the sauce to a simmer and reduce the heat to low. Let it cook for about 15-20 minutes, stirring occasionally.

Adjust Seasoning
Taste and adjust seasoning as necessary. Keep warm until ready to serve.
Prepare the Calamari

Combine Dry Ingredients
In a large bowl, mix together 1 cup of all-purpose flour, 1 cup of cornstarch, 1 teaspoon of salt, 1 teaspoon of black pepper, 1 teaspoon of garlic powder, and 1 teaspoon of cayenne pepper.

Prepare Wet Mixture
In another bowl, whisk together 2 large eggs and 1 cup of milk until well combined.

Heat the Oil
In a large heavy-bottomed pot, heat 4 cups of vegetable oil over medium-high heat until it reaches 350°F (175°C).

Dredge Calamari
Dip each calamari ring into the egg mixture, allowing excess to drip off, then dredge in the flour mixture, ensuring it is well coated.

Fry the Calamari
Carefully place the coated calamari rings into the hot oil in batches, frying for 2-3 minutes or until golden brown. Avoid overcrowding the pot.

Drain and Serve
Using a slotted spoon, remove the fried calamari and drain on paper towels. Serve hot with marinara sauce.
