Chowder Preparation

  1. 1

    Prepare the Ingredients

Dice the potatoes, onion, celery, and garlic. Cut the halibut into bite-sized pieces.

  2. 2

    Sauté Vegetables

In a large pot, heat the olive oil over medium heat. Add the diced onion, garlic, and celery. Sauté until the onion is translucent, about 5 minutes.

  3. 3

    Add Potatoes and Broth

Stir in the diced potatoes, chicken or vegetable broth, salt, black pepper, dried thyme, and bay leaf. Bring to a boil, then reduce the heat and let it simmer for about 15 minutes or until the potatoes are tender.

  4. 4

    Add Halibut and Cream

Once the potatoes are tender, add the halibut pieces and heavy cream. Simmer for an additional 5-7 minutes, until the halibut is cooked through and flakes easily with a fork.

  5. 5

    Season to Taste

Remove the bay leaf and adjust seasoning with salt and pepper if needed.

Serving

  1. 6

    Plate the Chowder

Ladle the chowder into bowls and sprinkle with freshly grated Parmesan cheese and chopped fresh parsley for garnish.
