Prepare the Fries

    Cut the Potatoes

    Peel the russet potatoes and cut them into thick strips, about 1/4 inch wide.

    Place the cut potatoes in a bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch.

    Drain the potatoes and pat them dry with a clean kitchen towel to remove excess moisture.

    In a large pot or deep fryer, heat the oil to 350°F (175°C). Fry the potatoes in batches until golden brown and crisp, about 4-5 minutes. Remove and drain on paper towels. Season with salt.

    In a medium bowl, combine the mayonnaise, chopped pickles, capers, lemon juice, and dill. Mix until well combined.
