Prepare the Fries

Cut the Potatoes
Peel the russet potatoes and cut them into thick strips, about 1/4 inch wide.

Dry the Potatoes
Drain the potatoes and pat them dry with a clean kitchen towel to remove excess moisture.

Prepare the Tartar Sauce

Mix the Ingredients
In a medium bowl, combine the mayonnaise, chopped pickles, capers, lemon juice, and dill. Mix until well combined.

Season the Sauce
Add salt and black pepper to taste. Adjust the seasoning as necessary, then cover and refrigerate until ready to serve.
Prepare the Fish

Make the Batter
In a large bowl, mix together the flour, baking powder, salt, and black pepper. Gradually whisk in the cold sparkling water until the batter is smooth and thick.

Heat the Oil
In a deep pot, heat the oil to 350°F (175°C) for frying.

Coat the Fish
Dip each fish fillet into the batter, ensuring it is fully coated.

Carefully place the battered fish into the hot oil and fry until golden brown, about 5-6 minutes. Remove and drain on paper towels.
