Prepare the Batter
In a mixing bowl, combine the all-purpose flour, baking powder, salt, and black pepper. Gradually whisk in the beer or sparkling water until the batter is smooth and thick. Let it rest for about 15 minutes.

Heat the Oil
In a deep frying pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Batter the Cod
Dip each cod fillet into the batter, ensuring it is well coated.

Fry the Cod
Carefully place the battered cod fillets into the hot oil. Fry for about 5-7 minutes or until the batter is golden brown and the fish is cooked through. Remove and drain on paper towels.

Prepare the Potatoes
Peel the russet potatoes and cut them into thick strips (about 1/4 inch thick).

Soak the Fries
Soak the potato strips in cold water for at least 30 minutes to remove excess starch. This will help achieve a crispier texture.

In another pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the soaked potato strips in batches for about 4-5 minutes until they are golden brown and crispy. Remove and drain on paper towels, then season with salt to taste.
