Batter Preparation

    Make the Batter

    In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, and salt. Gradually whisk in cold water and beer (if using) until the batter is smooth and has no lumps. Let it rest for about 30 minutes.

    Prepare the Cod

    While the batter is resting, rinse the cod fillets under cold water and pat them dry with paper towels. Season both sides with salt and black pepper.

    Prepare the Fries

    Peel the potatoes (if desired) and cut them into thick strips to make fries. Rinse the cut potatoes in cold water to remove excess starch, then pat them dry with paper towels.

Frying

    Fry the Fries

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Carefully add the fries in batches and fry for about 5-7 minutes or until they are golden brown and crispy. Remove and drain on paper towels, sprinkling with salt while hot.

    Fry the Cod

    In the same oil, dip each cod fillet into the batter, allowing excess to drip off. Carefully place them in the hot oil and fry for about 4-5 minutes or until golden brown and crispy. Remove and drain on paper towels.

Serving

    Plate the crispy battered cod alongside the fries. Serve with lemon wedges and tartar sauce if desired.
