Chicken Marinade

Method

Chicken Marinade Preparation

  1. 1

    Prepare the Chicken

Cut the chicken breasts into 1-inch cubes and place them in a large mixing bowl.

  2. 2

    Mix the Marinade

In a separate bowl, whisk together olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper.

  3. 3

    Marinate the Chicken

Pour the marinade over the chicken cubes, ensuring they are well-coated. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

Tzatziki Sauce Preparation

  1. 4

    Prepare the Cucumber

Grate the cucumber and squeeze out excess moisture using a clean kitchen towel or paper towels.

  2. 5

    Mix Tzatziki Ingredients

In a bowl, combine Greek yogurt, the drained cucumber, minced garlic, olive oil, lemon juice, chopped dill, and salt. Stir until well mixed.

  3. 6

    Chill the Sauce

Cover the tzatziki sauce and refrigerate for at least 15 minutes to allow the flavors to meld.

Cooking and Serving

  1. 7

    Prepare the Grill

Preheat your grill or grill pan over medium-high heat.

  2. 8

    Skewer the Chicken

Thread the marinated chicken cubes onto skewers, leaving a little space between each piece for even cooking.

  3. 9

    Grill the Chicken

Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.

  4. 10

    Prepare the Pita and Vegetables

While the chicken is grilling, warm the pita bread on the grill for about 1-2 minutes and prepare the lettuce, diced tomato, and sliced red onion.

  5. 11

    Assemble the Dish

To serve, place the grilled chicken skewers on a plate with warm pita, lettuce, diced tomato, and red onion. Serve with a generous dollop of tzatziki sauce on the side.
