Method

Preparation

  1. 1

    Prepare the Shrimp

Peel and devein the black tiger shrimp, leaving the tails intact. Rinse under cold water and pat dry with paper towels.

Batter Mixing

  1. 2

    Mix the Batter

In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, black pepper, and paprika. Whisk together until evenly mixed.

  2. 3

    Add Water

Gradually add the ice cold water to the dry ingredients while whisking until a smooth, thick batter forms. Let the batter rest for about 10 minutes.

Frying

  1. 4

    Heat the Oil

In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

  2. 5

    Batter the Shrimp

Dip each shrimp into the batter, ensuring it is fully coated.

  3. 6

    Fry the Shrimp

Carefully place the battered shrimp into the hot oil, a few pieces at a time. Fry until golden brown and crispy, about 3-4 minutes. Remove and drain on paper towels.

Serving

  1. 7

    Serve

Serve the battered black tiger shrimp hot with your choice of dipping sauce.
