Preparing the Fish

    Prepare the Batter

    In a mixing bowl, combine 1 cup of all-purpose flour, 1 cup of cornstarch, 1 tsp of baking powder, 1 tsp of salt, and 1 tsp of pepper. Gradually whisk in 1 cup of cold sparkling water until the batter is smooth and slightly thick.

    Heat the Oil

    In a deep fryer or a large heavy pot, heat 4 cups of vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Coat the Fish

    Pat the Alaskan halibut fillets dry with paper towels. Dip each fillet into the batter, allowing excess batter to drip off.

    Fry the Fish

    Carefully place the battered fish fillets into the hot oil, cooking in batches if necessary. Fry for about 4-5 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

    Prepare the Potatoes

    Peel the russet potatoes and cut them into thick strips to resemble fries.

    In another pot, heat 4 cups of vegetable oil over medium-high heat until hot. Fry the potato strips in batches for about 5-7 minutes or until golden brown and crispy. Remove and drain on paper towels, sprinkling with salt to taste.

    Plate the Dish

    Serve the crispy fried halibut with the homemade chips on a plate. Add tartar sauce and lemon wedges on the side for dipping.
