Batter Preparation

Mix Dry Ingredients
In a medium bowl, whisk together the all-purpose flour, cornstarch, baking powder, and salt until well combined.

Add Liquid
Gradually pour in the cold water and beer (if using) while whisking until the batter is smooth. The batter should be thick enough to coat the back of a spoon. Let it rest for about 15 minutes.
Fish Preparation

Season Halibut
Pat the halibut fillets dry with paper towels. Season both sides with salt and black pepper.

Heat Oil
In a deep pot or fryer, heat the vegetable oil to 350°F (175°C).
Chips Preparation

Prepare Potatoes
Peel the russet potatoes and cut them into thick strips. Rinse them in cold water to remove excess starch and pat dry with paper towels.

Fry Chips
Carefully add the potato strips to the hot oil in batches and fry until golden brown and crispy, about 5-7 minutes. Remove with a slotted spoon and drain on paper towels. Season with salt immediately.
Cooking Fish

Fry Halibut
Dip each seasoned halibut fillet into the batter, allowing excess to drip off. Carefully place the battered fillet into the hot oil. Fry for about 4-5 minutes on each side or until golden and crispy. Remove from oil and drain on paper towels.
Serving

Plate the Dish
Serve the crispy halibut alongside the golden chips. Enjoy hot with your favorite dipping sauce, such as tartar sauce or malt vinegar.
