Prepare the Shrimp
In a mixing bowl, combine the flour, cornmeal, and cajun seasoning. Dredge the shrimp in the buttermilk, then coat them in the flour mixture. Set aside.

Heat the Oil
In a deep pot or fryer, heat the vegetable oil to 350°F (175°C) over medium-high heat.

Fry the Shrimp
Carefully add the coated shrimp to the hot oil in batches. Fry until golden brown and cooked through, about 3-4 minutes per batch. Remove and drain on paper towels.

Toss in Voodoo Sauce
In a large bowl, toss the fried shrimp with the Voodoo sauce until well coated.

Assemble the Po-Boy
Slice the French bread or hoagie rolls lengthwise. Fill each roll with the sauced shrimp, and top with shredded lettuce, sliced tomatoes, and pickles.
