Blacken the Tuna
Pat the tuna fillets dry and coat both sides with blackening spice. Heat a skillet over medium-high heat and add a little oil. Sear the tuna for about 2-3 minutes on each side for medium-rare, or to your desired doneness.

Prepare the Artichokes
In a separate skillet, add a bit of oil and heat over medium flame. Drain the artichoke hearts and slice them in half. Fry until golden and crispy, about 3-4 minutes.

Assemble the Dish
Place the blackened tuna fillets on a plate. Drizzle the jalapeño lime hollandaise over the top. Garnish with fried artichoke hearts, thinly sliced red onion, and a sprinkle of Parmesan cheese.
