Preparing the Sweet Potato Base

    Roast the Sweet Potatoes

    Preheat the oven to 400°F (200°C). Pierce the sweet potatoes with a fork and place them on a baking sheet. Roast for 45-50 minutes until tender. Let them cool slightly, then scoop out the flesh and mash it until smooth.

    In a mixing bowl, whisk together the heavy cream, egg yolks, granulated sugar, vanilla extract, and a pinch of salt. Fold in the mashed sweet potato until well combined.

    Preheat your oven to 325°F (160°C). Pour the sweet potato mixture into ramekins, filling them about 3/4 full. Place the ramekins in a baking dish and fill the dish with hot water until it reaches halfway up the sides of the ramekins.

Baking the Creme Brulee

    Bake in the preheated oven for 40-45 minutes, or until the custard is set but still slightly jiggly in the center. Remove from the oven and let cool to room temperature, then refrigerate for at least 2 hours.
