Preparation and Cooking

    Prepare the Mushrooms

    Preheat your grill to medium-high heat. Clean the portabella mushrooms and remove the stems. Brush each mushroom cap with olive oil and season with salt and pepper.

    Cook the Filling

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and diced bell pepper, and sauté for about 3 minutes until the pepper is soft. Add the chopped spinach and cook until wilted. Remove from heat and stir in the crabmeat and Gulf shrimp. Add lemon juice, salt, and pepper to taste.

    Stuff the Mushrooms

    Fill each portabella mushroom cap with the seafood mixture. Top each stuffed mushroom with grated Parmesan cheese.

    Grill the Stuffed Mushrooms

    Place the stuffed mushrooms on the grill and cook for about 8-10 minutes, or until the shrimp are cooked through and the mushrooms are tender.

    Serve

    Remove the mushrooms from the grill and let them cool slightly. Serve warm with a drizzle of lemon aioli and additional Parmesan cheese on top.
