Prepare the Portabella Mushrooms
Preheat your oven to 375°F (190°C). Remove the stems from the Portabella mushrooms and scrape out the gills. Brush them lightly with olive oil and season with salt and pepper. Place them on a baking sheet.

Combine Ingredients
In a mixing bowl, combine the cooked shrimp, crab meat, cream cheese, green onion, lemon juice, Old Bay seasoning, salt, and pepper. Mix until well combined.

Stuff the Mushrooms
Spoon the seafood filling generously into each Portabella mushroom cap.

Prepare the Crabmeat Ravigotte
While the mushrooms are baking, prepare the Crabmeat Ravigotte by mixing crab meat with mayonnaise, Dijon mustard, lemon juice, chopped parsley, salt, and pepper in a separate bowl.

Assemble the Sandwich
Once the mushrooms are done, place them on brioche buns, top with Crabmeat Ravigotte, and add a handful of spring mix.
