Make the Roux
In a large, heavy-bottomed pot or Dutch oven, heat the vegetable oil over medium heat. Gradually whisk in the flour, stirring constantly until the mixture turns a dark brown color. This may take about 20-30 minutes.

Add the Liquids
Slowly stir in the chicken broth and diced tomatoes. Bring the mixture to a simmer.

Add the Seafood and Seasonings
Add the shrimp, crabmeat, crawfish, sliced okra, bay leaves, thyme, cayenne pepper, salt, and black pepper. Stir to combine and let simmer for about 20 minutes.

Finish the Gumbo
Remove the bay leaves and stir in the filé powder. Adjust the seasoning if necessary.

Serve
Serve the gumbo hot over a scoop of cooked white rice.
