Oysters Rockefeller Directions

Prepare the Oysters
Preheat your oven to 400°F (200°C). Shuck the oysters and place them on a baking sheet, making sure they remain on their half shells.

Cook the Spinach
In a skillet, melt the butter over medium heat. Add the minced garlic and sauté until fragrant. Then add the fresh spinach and cook until wilted. Remove from heat.

Mix the Filling
In a bowl, combine the cooked spinach, cream cheese, Pernod, chopped parsley, salt, and black pepper. Mix until well combined.

Assemble the Oysters
Spoon the spinach and cream cheese mixture generously over each oyster.

Top with Parmesan
Sprinkle grated Parmesan cheese over the top of each oyster.

Bake the Oysters
Place the baking sheet in the preheated oven and bake for about 10-12 minutes, or until the cheese is bubbly and golden.

Serve
Remove from the oven and let cool slightly before serving. Enjoy your Oysters Rockefeller warm.
